Tono Hinoki is one of the three major Japanese cypresses. This Japanese Hinoki Cutting Board is made from this high-grade wood, Tono Hinoki in Gifu Prefecture. It is light, thin and durable. It is an ideal long-lasting cutting board which has a sense of stability.

I was a little sceptical before purchasing this board, given that I've only been using plastic cutting boards and don't particularly like using my gifted bamboo board. The bamboo cutting board is a little too hard and noisy when I chop, whereas the plastic ones are without the risk of their particles being ingested.Be warned: once you unwrap the board, you'll notice the lemony wooden scent, which goes away after a while and returns occasionally when you wash it. At first sight, I was reluctant to use it as it was beautifully cut and sanded. I wanted to be careful when using it, but my Zwilling Twin Fin II still leaves its marks. Cutting food on this board is just fantastic. None of that noise when using a bamboo board! And when the knife hits the board, it feels like cutting on plastic.The downside? It requires quite a bit of care, namely, oiling and sanding if the cut marks get to you. Since I don't usually wash my board in the dishwasher, I had no issue. Overall, I'm glad I made the switch!
I had been using a bamboo cutting board. I read an article that said not to use bamboo because it dulls your knife. I got this to use instead. I like the size, quietness of cutting on it. The only reason I gave it 4 stars and not 5 is when washing it it looks like the wood is pulling out of it. It feels smooth but has creases. I use my Japanese knife with it.
The cypress wood has a great smell!
I love the smell of hinoki! This cutting board won’t damage your knives.
