Making awase miso is very simple. As the ingredients are rice, soybean, and salt only, the difference in taste is obvious. It is said that 80% of the taste depends on the quality of rice malt. Rice koji is made by the traditional "ita malted rice" method over 40 hours. Making good koji is very important for making awase miso. We do not make koji by machine, we take time to make it carefully. The miso warehouse protected by miso craftsmen is a small warehouse without mass production equipment, but craftsmen continue to stick to natural brewing that can be done by hand.

Traditional Japanese Food

Awase miso, as an ingredient of awase miso soup, has a long history in Japan. It was introduced to Japan as far back as the Asuka period (710-794), but at that time awase miso was not soluble in water, so people ate awase miso by licking it off. People began to eat miso soup in the Kamakura period.(1185-1333). In the Kamakura period, a meal style called "Ichiju-ichisai" (One soup and One Vegetable) began to take root in samurai society, and the custom of eating awase miso soup with every meal was established. From then, awase miso soup became popular as a food for warfare. In the Edo period (1603-1867), miso became popular for Japanese people in their daily lives. Nowadays, miso soup appears on every family's dining table. Since then, awase miso soup has been a staple of the Japanese diet.

Our fine awase miso is slowly aged in a natural wooden barrel for a long period. Compared to other artificial fermentation containers, the natural wooden barrel "breathes", meaning that during the summer, the wooden plates swell due to the hotness & high humidity of Japanese summer. On the other hand, during the winter, the plates tighten due to the coldness & dryness of Japanese winter. These natural phenomena adjusts the inner temperature of the wooden barrel, and keeps an ideal condition for fine awase miso fermentation.

1. Two slices of sandwich bread 2. One Boiled Egg 3. Red Miso Powder: 1tsp 4. Mayonnaise: 1 1/2tbsp 5. Mayonnaise: Appropriate amount／Parsley: Appropriate amount

[A] Mix 3 and 4 well, add coarsely chopped boiled eggs and mix.

[B] Spread 5 on one side of both slices of bread. Put [A] on one slice and sandwich with the other slice. Cut into desired size and enjoy! *You can replace the mayonnaise on the bread with spicy mayonnaise.

Natural Brewing

During fermentation and maturation of miso, the fermentation tanks are placed in a warm room. Several kinds of microorganisms and enzymes from the koji greatly contribute to this process, creating various flavors unique to miso.The Yatsugatake Natural Brewery is located at an altitude of approximately 850m above sea level. We use subterranean water of Yatsugatake pumped up from nearly 90 m underground and matured slowly over a long period of time. This brings out a mellow and deep flavor to this naturally brewed Shinshu Miso.

How Rice Miso is Made

First, soybeans are in the boiling, steaming and pressure cooking process. Rice will go into the steaming process then it will become rice malt(koji). After that, the soybeans and the rice malt will be mixed with water and salt. Then, the mixture of soybeans, rice malt, water and salt will go into the fermentation and aging process for a long period of time in a brewing warehouse. The brewery is located in a mountainous area at an elevation of 849 meters, making it an ideal place for fermentation and maturation of miso due to the cooler temperatures. This long-term aging process gives miso a mellow, full-bodied flavor.

Tofu Hamburger Steak with Reduced Sodium Miso

Ingredients (4 Humberger Steaks) 130 g Tofu, 250 g Minced Beef, 90 g Carrot, 160 g Onion, 1 Egg, 30 g Breadcrumbs, 1 tbsp Reduced sodium Miso, A pinch of pepper

[Sauce] 1 tbsp Reduced sodium Miso, 2 tbsp Ketchup, 2 tbsp Cooking Sake, 2 tbsp Water

*Wrap the tofu in thick kitchen paper and drain the water thoroughly. *Finely chop the carrots and onions and microwave for 2 minutes (1000W) and combine. *For the sauce, place the ingredients in a frying pan and bring to a boil.

Healthy Oil-Free Miso and Soy Sauce Ramen

Ingredients (2 servings) 2 portion of noodles, 8 Shrimps, 40 g Bean sprout, 30 g Corn, Green Onions as needed, 1 packet YAMASAN Vegetable Dashi Stock [A] 2 tbsp Mirin, 2 tbsp Soy Sauce, 2 tbsp Reduced Sodium Miso
1. Put the dashi packet in a pot and make the stock. In a separate pan, boil the shrimp, bean sprouts, and corn. 2. Add the boiled shrimp broth to the soup stock(step1). 3. Heat the soup stock and add [A]. Boil the noodles. 4. Pour the soup stock into a bowl and add all the ingredients.

Coconut Milk Miso Curry

Ingredients (4 servings) [A] 8 Green Chili Peppers, 220 g Eggplant [B] 8 Chicken Wing Sticks, 400 ml Coconut Milk, 2 tbsp Curry Powder [C] 3tbsp Reduced Sodium Miso, 1 tbsp Fish Sauce, 170 g Onion, A pinch of cumin powder
1. Sauté thinly sliced onions until soft, then add chopped [A] and sauté briefly. 2. Add [B] and simmer for 5-6 minutes. Remove the foam, add [C], simmer for about 5 minutes, and sprinkle with cumin powder to add aroma. 3. Top with roasted almond slices to taste.

Tonjiru (Miso Soup with Pork and Vegetables)

Ingredients (4 servings) [A] 60 g Potato, 20 g Burdock, 15 g Carrot, 20 g Shiitake Mushroom, 55 g Tofu, 30 g Konjac, 90 g Pork, 600mL Water, 2 1/2 tbsp Reduced Sodium Miso, 1 Dashi Packet

Cut [A] to your desired size. 2. Pour water into a pot, add the dashi packet, bring to a boil, and extract the dashi. 3. Add [A] and simmer over medium heat until the ingredients are soft. Dissolve the miso and serve. 4. Top with chopped green onions to taste.

Ingredients (2 servings) 200 g Spaghetti, 2 Sausages, 1/2 Onion, 30 g Celery, 30 g Carrot, 1 Green Pepper, 10 g Butter, 2 tbsp Milk [A] 3 tbsp Tomato Ketchup, 3 tbsp Reduced Sodium Miso

Mix [A] and boil the spaghetti. 2. Thinly slice the sausages and vegetables. 3.Heat butter in a frying pan, add sausage and vegetables and saute quickly over high heat. Add mixed [A]and saute further. 4. Add the spaghetti and saute quickly, then add the milk and saute until combined.
