Mulberry Leaf Sauce
1 tsp mulberry leaf powder • 2 tsp sugar (brown sugar powder) • 1 tsp water
Mix the mulberry leaf powder and sugar together. Gradually add the water over low heat, stirring until the mixture is smooth and well combined.
Mulberry Leaf Dumplings
80 g Shiratamako (glutinous rice flour) • 1 tsp Mulberry Leaf Powder • 70 ml water
Instructions
- Combine the shiratamako and mulberry leaf powder in a bowl.
- Gradually add the water in several batches, kneading until the dough is about as soft as an earlobe.
- Shape the dough into small balls.
- Boil in plenty of boiling water until cooked through.

1/2 tsp mulberry leaf powder• 1 packet Gyokuro Umami Dashi(or substitute with any store-bought dashi stock)• 400 ml water
Prepare the dashi broth. In a small amount of the broth, dissolve the mulberry leaf powder, then stir it back into the remaining broth.
