This kokuto is produced by slowly simmering freshly pressed cane juice — a time-intensive method with no shortcuts. Okinawan kokuto is remarkably scarce — only 5–6% of the sugarcane grown in Okinawa is turned into kokuto, and sugar mills once found throughout the prefecture now remain on just eight islands.
