Dashi is at the heart of Japanese cuisine.

Dashi is made by extracting umami flavors from natural ingredients, and has the excellent ability to enhance and harmonize the flavors of other ingredients. It is an indispensable cooking broth in Japanese cuisine!

The word umami means "pleasant flavor" in Japanese, and plays an important role in creating the deliciousness of food. Umami can not only be found in bonito flakes and kelp. Onions and tomatoes contain a key umami component glutamic acid, and shiitake mushrooms contain guanylic acid.

The Umami of Vegetables

This is an authentic vegetable dashi packet that has a rich yet refreshing flavor. It contains no animal ingredients, MSG or sugar.

Two Types of Japanese Tea

Two types of tea, Gyokuro and Hojicha, are used as secret ingredients. The theanine contained in tea has umami, and the aroma creates a mild broth.

Recipe 1

Vegan Minestrone with Vegetable Stock

Ingredients (3 servings)

1/2 Onion/50g Celery/6 Cherry Tomatoes/100g Boiled Chickpeas/2 tsp Olive Oil

[A] 50g King Trumpet Mushrooms/100g Broccoli[B] 1 packet Vegetable Stock/400mL Water

1. Heat olive oil and sauté the diced onion and celery.2. Fry the cherry tomatoes until all the water has evaporated, add the finely chopped [A] and [B] , bring to a boil, and simmer over low heat for about 5 minutes.3. Serve in a bowl, sprinkle with black pepper and enjoy!

Recipe 2

Nikujaga(Japanese Beef and Potato Stew) with Vegetable Stock

Ingredients (2〜3 servings)

200g Beef/3 Potatoes/1 Carrot/1 Onion/6 Snap Peas

[A] 200mL Water/2 tbsp Soy Sauce/2 tbsp Cooking Sake/2 tbsp Sugar/2 tbsp Mirin(Cooking Sake)/1 packet Vegetable Stock

1. Slice the onion into wedges, cut the carrot and potato into chunks, and boil the snap peas.2. Fry the beef until it changes color, then add the onion, carrot, and potato and fry in that order.3. Add [A] to 2 and simmer over low heat for 20 to 30 minutes. Finally, add the snap peas and enjoy!

Recipe 3

Japanese-Style Pilaf with Umami Veggie Broth

Ingredients (3 servings)

2 cup of rice/600mL Water/30g Bacon/40g Green Peas/45g Carrot/40g Corn/40g Shimeji Mushrooms/2 packets Vegetable Stock

1. Rince the rice.2. Put all ingredients in a rice cooker and cook.

*Add butter as desired.

Recipe 4

Bouillabaisse with Vegetable Stock

Ingredients (2 servings)

[A] 150g Cod/2 Shrimp/ 1/2 Onion /1 Potato

[B] 150mL Canned Peeled Tomatoes/1 packet Vegetable Stock/400mL Water/100mL White Wine/2 tbsp Olive Oil/Salt to taste

1. Wash the shrimp thoroughly and remove the vein. Slice the onion into wedges and cut the potato into bite-sized pieces.2. Heat olive oil in a pot and add the ingredients [A] in the order listed and stir fry.3. Add the white wine to step 2 and reduce by half. Add [B] and simmer for 20 minutes.

Recipe 5

Vegan Tomato Ramen with Vegetable Stock

Ingredients (2 servings)

2 Serving of Ramen Noodles/2 Tomato/ 1/2 Celery /2 Shiitake Mushrooms/

[A] A Slice of Ginger/1 tsp Shichimi Togarashi Paste/1 tbsp Vegetable Oil

[B] 2 packets Vegetable Stock/500mL Water/1 tbsp Soy Sauce1. Slice the tomatoes into wedges, roughly chop the celery and shiitake mushrooms, and finely chop the ginger.2. Stir fry [A] and the vegetables cut in step 1 in a pot, then add [B] and simmer gently.3. Place the boiled ramen noodles in a bowl and pour over step 2.

Recipe 6

Cabbage rolls with Vegetable Stock

Ingredients (2 servings)

8 Cabbage Leaves

[A] 250g Minced Beef/50g Onion/1 Egg/20g Breadcrumbs/A pinch of salt and pepper[B] 1 packet Vegetable Stock/400mL Water[C] 8 Mushrooms/4 Snap Peas

1. Remove the thick core of the cabbage and blanch the rest. Chop the onion and carrot.2. Mix [A] well and divide into 4 equal parts. Roll it up in 2 layers of cabbage and bind with toothpicks.3. Put [B] and step 2 in a pot and simmer over medium heat. When they are soft, add [C] and simmer briefly.

Nice veggie alternative ...

I have used lots of dashi powders, but never a vegetarian version. I was pleasantly surprised by the rich flavor. I do eat a lot of vegan and vegetarian foods, but also eat meats and seafoods, so it is good to find a delicious option like this for veggie days and meals. You can use this for quick stocks or to speedily add flavor to homemade stocks and broths. I can be used as a seasoning as well and was very nice mixed with some coating we battered tofu with before frying up. I highly recommend that if you also like tofu. The resealable packaging makes it easy to use and easy to store and keep fresher. As with most products like this, it is on the salty side, but that comes with the territory.

Excellent packets to keep on hand for quick preps

Very nice balanced flavor from these. Not too salty, just right. Sometimes I just add a packet to hot water as if making tea and add it to my bowl of veggies. It's not very strong flavored though. I also tend to reuse the bag a time or two to get the most out of it. Sometimes I just drink it like tea on a hot afternoon when feeling dehydrated. About as easy as it gets to just drop a packet into hot water. The ingredients seem very high quality, and I love that it is from Japan. Good enough value at approximately one USD per packet, considering the quality ingredients, and ease of use.

Good taste and full of flavor

These YAMASAN KYOTO UJI Japanese Umami Vegan Dashi Stock Powder, Healthy Veggie Dashi Packet come in a box of 15 packets of 6g of vegetarian dashi stock powder. These are really easy to use as you boil hot water and throw in the packet of dashi stock to create a broth which is full of flavor and seems high quality. The packet feels like it is made from a thick paper that does not rip easily even when getting wet. This is versatile as it can be used as its own soup base or you can add it to another base to enhance the flavors. This has moderate value due to it being moderately priced and represents okay quality for what you receive in relation to the price.

Perfect for a quick soup base for spontaneous cravings

I usually make broths from scratch but it can take a lot of work and storage (storing bones and vegetable scraps). Sometimes, I just need a good bullion to give me a quick base for a soup. This dashi comes in individual tea bags and has more complex flavors than just basic chicken, vegetable, or beef bullion. To get more depth in the stock, I use this for a quick wholesome meal for my family-chop up a bunch of veggies like Korean radish, fish cake, Enoki mushrooms, cabbage, and ginger, add in mungbean glass noodles, and thinly sliced beef and voila-instant meal for hot pot cravings at home. Basically, I just throw whatever leftover meat, veggies, and noodles I have on hand. The tea bag itself seems compostable, at least it's not nylon. No MSG and made in Japan, I say that's a pretty good deal for 15 packets.
