Recipes Using Green Tea in Meals

Braised Pork with Green Tea

Ingredients(2serving) 

150g pork belly block/250cc green tea/ 1/2 tsp salt

[A]1 tbs mirin/ 1/2 tsp sugar/1 tbs soy sauce

  1. Boil the pork in water for 3 minutes, then drain.
  2. Simmer with green tea, and salt for 30 minutes.
  3. Warm ingredient group [A] in the microwave, pour over sliced pork, and serve.

Ochazuke(Rice with Tea)

Place cooked rice in a bowl, top with salted kelp, sesame seeds, chopped green onions, and pickled plum, then pour hot tea over it to finish!

I recommend cold tea on hot days.

This is a traditional Japanese light meal, perfect for busy mornings or when you need a quick snack.

Somen Noodles with Green Tea Dipping Sauce

Ingredients(2serving) 

150g Somen noodles/150cc Green tea
[A]1 tsp salt/ 1/3 tsp 150cc waterpowdered dashi/
[B]Green onions, grated ginger, and white sesame seeds to taste.

  1. Cook the somen noodles according to the package instructions, then rinse under cold running water and drain well.
  2. In a pot, bring ingredient A to a boil, then add green tea and ice to chill.
  3. Add ingredient B to taste, if desired.

Tea Dessert Recipes

Green Tea Jelly

Ingredients(4serving) 

5g powdered gelatin/25ml water/300ml hot water/10g green tea leaves/30g granulated sugar

  1. Brew the green tea and set aside.
    Soften the powdered gelatin in water.
  2. In a bowl, combine the softened gelatin, granulated sugar, and brewed tea, stirring until dissolved.
  3. Stir well while cooling, and once it reaches room temperature and thickens, pour into serving containers.Chill until fully set.

Serve as is, or garnish with cream or sprinkle with powdered tea, if desired.

Green Tea Cookies

Ingredients(One baking sheet’s worth) 

200g cake flour/5g powdered green tea powder/50g sugar/1 egg/30g vegetable oil

  1. Mix flour and green tea powder.
  2. Beat egg, sugar, and oil separately, then combine with the dry mix to form dough.
  3. Roll out to 5 mm thick, cut into shapes, and bake at 180 °C (356 °F) for 20 minutes.
  4. Cool before serving.


Lightly sweetened and perfect as a palate cleanser.

Recipes Using Hojicha Tea in Meals and Desserts

Hojicha Soup with Hearty Mushroom and Meatballs

Ingredients(2-3servings) 

500 ml hojicha/Assorted mushrooms: a few kinds, as desired/Green onions: to taste/Chicken meatballs: as much as you want/2 Eggs
2 tbsp Dashi Stock/2 tbsp Soy sauce/1 tbsp Sugar

  1. Place the cut mushrooms, dashi, and hojicha in a pot and simmer.Carefully remove any scum that rises to the surface.
  2. Add the remaining ingredients and cook through, adjusting the flavor by adding seasonings and extra water as needed.
  3. Finally, slowly pour in the beaten eggs, and it’s ready to serve!

Hojicha Rice Porridge

Ingredients(2serving) 

1/2 cup rice (washed)/600cc hojicha (roasted green tea)

  1. Place the rice and hojicha in a pot and heat over medium heat.
  2. Once it comes to a boil, cover with a lid and simmer on low heat for 30 minutes.
    If the liquid reduces too much, gradually add more hojicha.
  3. Cook until the desired consistency is reached.For extra flavor, you can add salt or dashi to taste.


This recipe is easy to digest and gentle on the stomach.

Easy Hojicha Ice Cream

Ingredients(2-3serving) 

100 ml Fresh cream/40 g Sugar/1 Egg/6 g Hojicha powder

  1. In a bowl, combine the fresh cream and sugar, and whip until stiff peaks form.
  2. Break in the egg and mix, then add the hojicha powder.
  3. Mix well, transfer to a storage container, and chill in the freezer until set. Done!


You can easily make this using matcha or other tea powders as well, so it’s highly recommended!
