Curry Piccata

Ingredients (2 servings) 

2 salmon fillets (or sliced meat of your choice)/2 tbsp olive oil/Flour, as needed/Salt and pepper, to taste

[A]1 egg/2 tbsp grated cheese/ 1/2 tbsp curry powder

  1. Season salmon with salt and pepper, then lightly coat with flour.
  2. Mix [A] ingredients well and dip the salmon into the mixture.
  3. Heat olive oil in a frying pan and cook salmon until golden brown on both sides.
  4. Serve hot, optionally with ketchup or your favorite sauce.

Tandoori chicken

Ingredients (2 servings)

300 g chicken thigh/1/2 tbsp vegetable oil

[A] Yogurt sauce
80 g plain yogurt/1 tbsp curry powder

  1. Cut the chicken into 8–10 pieces.
  2. Put the ingredients in [A] into a plastic bag and knead well from the outside to mix.
  3. Add the chicken to the bag and knead gently. Remove the air, seal the bag, and refrigerate for at least 2 hours.
  4. Heat oil in a frying pan over medium heat. Lightly drain the chicken and fry until cooked through.

Broccoli Curry Soup

Ingredients (2 servings)

1/2 head broccoli/1 potato/ 1/4 onion/ 1/3 carrot/2 sausages/2 tsp olive oil

[Seasonings]1/4 tsp salt/2 tsp soy sauce/1 tsp chicken stock powder/1 tsp curry powder/500 ml water

  1. Cut vegetables into bite-sized pieces; soak potato in water. Cut sausages into thirds.
  2. Sauté onion in olive oil until translucent, then add potato and carrot and cook briefly.
  3. Add seasonings and water, bring to a boil.Add sausages and broccoli, cover, and simmer for about 5 minutes until potatoes are tender.

Marinated Grilled Vegetables

Ingredients (1-2 servings) 

1 eggplant/ 1/2 zucchini/4 okra pods/ 1/2 bell pepper/ 1/2 ear of corn/1 tbsp olive oil

[A]200 ml water/1 tbsp mirin, soy sauce, vinegar/2 tsp curry dashi stock

  1. Cut the vegetables into bite-sized pieces and place them in a frying pan.
  2. Drizzle with olive oil and heat over medium heat.
  3. When you hear a sizzling sound, cover with a lid, reduce the heat slightly, and cook for 2–3 minutes on each side.
  4. Add all of [A] and bring to a boil.
    Once cooled, transfer to the refrigerator. Chilling allows the flavors to deepen even more.

Coleslaw

Ingredients (2 servings) 

5 Cabbage Leaves/ 1/4 Carrot/ 1/2 Cucumber/A pinch of salt

[Seasoning] 1 tsp Curry dashi stock/ 1/3tsp Salt/1 tbsp Vinegar/ 3/4 tbsp Olive oil

  1. Shred the cabbage, and julienne the carrots and cucumbers. 
  2. Mix A in a heatproof container. Cover with plastic wrap and microwave for 1 minute and 10 seconds at 1000W. Allow to cool and drain well. 
  3. Add seasoning ingredients to a bowl and mix 
  4. Add B to C and mix.

Salsa sauce

Ingredients (2 serving) 

 [A]1 Tomato/ 1/2 Onion/1 Green Pepper/ 1/2 Cucumber

[Seasoning] 1/3 tsp Salt/ 1/2 tbsp Lemon Juice/2 tsp Curry dashi stock

  1. Chop the tomato into bite-sized pieces, and finely chop the onions, peppers, and cucumbers. 
  2. Mix the seasonings in a bowl, then add [A] and mix.

*If you want to increase the spiciness, add Tabasco or chili oil.
